I made cupcakes tonight with my handy dandy Babycakes Cupcake maker.




First off, I ruined the first 8. It says to go ahead and throw all your batter in the machine and then plug it in. Which is fine. It should have said "Please pre-grease this cupcake prison and then maybe you'll be able to get your delicious cakes out". But it didn't. My first 8 mini-cakes were ruined. I couldn't get them out. My heat resistant spatula (i assume it was, because i've never had a problem with it before) MELTED trying to get the cakes out. I spent the next 20 minutes or so trying to get melted spatula out of my cupcake maker.

Once I finally got the cake holders cleaned, I followed the directions impeccably, but pre-greased with a bit of olive oil before I added my batter. So we have Oil+batter+5 minutes=Yummeh goodness.

However, because I'm working with a concave surface, how in the hell am i supposed to get my little cakes out?? My spatula obviously did not work. I'm not supposed to use metal! So what do I do? I use a spoon and give no fucks about it. I didn't scratch anything and my cupcakes came out semi-perfect (and they will be perfect when I make more tomorrow).

I give Babycakes Cupcake Maker 3 out of 5 stars. They could improve by including silicone cupcake inserts so you don't burn your fingerprints off trying to get your tiny little cakes out of this contraption.

CARAMEL APPLE PIE

sorry its taken so long to get you the recipe!!

1/4 cup chopped pecans, divided
1 (9 inch) graham cracker pie crust
1 (21 ounce) can apple pie filling
2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/4 teaspoon vanilla
2 eggs
1/4 cup caramel topping
12 pecan halves

Sprinkle half of the chopped pecans in pie crust. Reserve 3/4 cup apple pie filling; spoon remaining filling into crust. In a bowl, beat cream cheese, sugar and vanilla until smooth. Add eggs, beating well. Pour over apple filling. Bake at 350 degrees for 35 minutes, or until center is set. Cool. Combine reserved 3/4 cup pie filling and caramel topping into saucepan. Heat about 1 minute. Spoon onto cooled pie, spreading evenly. Sprinkle remaining chopped pecans over top. Decorate with pecan halves. Refridgerate until ready to serve.

I left the pecans out of mine and it was pretty good. It's basically a cheesecake (altho i did not know that at the time) so i figure you can use any kind of canned pie filling, if you dont want apples. It was good though :)
